I LOVE mashed potatoes.....
that being said, I NEVER make them. Who has time to peel the potatoes and when I make them they always end up gluey.....
Not with this recipe however! So glad my friend Allyson gave it to me! My family will no longer miss out on this family staple!
8- 10 red potatoes
1/2 cup hot milk
1 stick of butter (8 TBSP)
1/2 cup sour cream
salt and pepper to taste
Slice potatoes (not peel) to about 1/4th of an inch thick. Boil for 15 minutes. Drain, add soft butter to the bottom of the bowl, and then mash with an electric mixer. Leave a few lumps! Mix in sour cream and hot milk ( check consistency first though to see if this is needed) Add pepper and lots of salt! and Voila! SO EASY!!!!

Meatloaf
Got this recipe from a girl in my mom's bible study! Its SO easy and yummy!
MEATLOAF
1.5-2lbs ground beef
2 packets of dry onion soup mix
1.5-2 cups sharp cheddar
1/2 cup Italian bread crumbs
¼ or so of quick oats
1 green bell pepper, chopped finely
1 egg
1 TBSP Worcestershire sauce
½ cup of tomato sauce
The Sauce
1.5 -2 cups of ketchup
1 tablespoon of brown sugar
1 tsp yellow mustard
1.5 ish tsp Worcestershire sauce
Instructions:
bake the meatloaf at 350 degrees for 50-55 min
remove from oven and spread all sauce evenly over the top
bake an additional 15-20 minutes
