Tilapia Fish Tacos

I got this recipe from my friend Aileen! Its adapted from the magazine Cooking Light! We love to make this and invite people over because it makes enough for four people and we dont like to eat fish for left overs.


Fish Tacos

Crema Sauce:
¼ cup chopped fresh cilantro
3 TBSPN fat free mayo
3 TBSPN reduced fat sour cream
1 ½ tsp lime juice
¼ tsp salt
1 garlic clove, minced

Tacos:
1 tsp ground cumin
½ tsp paprika
¼ tsp cayenne
½ tsp salt
¼ tsp garlic powder
1 ½ lb tilapia
cooking spray
2 cups shredded cabbage
8 (6 inch) corn tortillas

11)   preheat oven to 425 degrees
22)   for crema, combine the first 8 ingredients in a small bowl, set aside
33)   for tacos, combine cumin and next 5 ingredients in a small bowl and sprinkle the spice mixture evenly over both sides of fish and place fish on baking sheet coated with cooking spray. Bake at 425 degrees for 9 minutes or until fish flakes easily when tested with fork.
44)   Heat tortillas according to packages
55)   Build tacos with fish, crema, and topped with cabbage.
